Mushroom, leek and potato salad with Prune dressing.

Serves 4

300g small potatoes
300g mixed mushrooms
30g butter
1 tbs olive oil
1 leek, thinly sliced
1 chilli, thinly sliced
1 garlic clove, chopped (optional0
12 small pitted prunes
100ml apple juice
Handful of rocket

  1. Boil the potatoes until tender, drain and slice in half.

  2. Heat the butter in a large pan and add half the olive oil.

  3. Add the leek and the potatoes. When just browned, remove from the pan and reserve.

  4. Tip the mushrooms into the pan and sauté in the remaining butter and oil. Add the chilli, garlic and prunes. Add the apple juice and bring to the boil, then take straight off the heat.

  5. Divide the leek and potato mix between 4 plates then sit the rocket on top. Place the warm mushroom salad on top of that and pour over any juices left in the pan.
